Lebanese Shawarma Pickle

This is the pickle which is served along with shawarma or grilled chicken. It is a sweet and vinegary pickle. Taste just amazing with grilled chicken.

Ingredients for Lebanese Shawarma Pickle

  • Carrot - 1 large peeled and cut into stick
  • Beetroot - 1 large peeled and cut into stick
  • Cucumber - 1 peeled, deseeded and cut into stick
  • Radish - 1 peeled and cut into stick
  • Green chilli - 3 to 4 slit
For Brine:
  • Water - 1 cup
  • Vinegar - 1.5 cup
  • Sugar - ½ cup
  • Salt - 2 tbsp
  • Mustard Seeds - 1 tsp
  • Fennel Seeds - 1 tsp

How to make Lebanese Shawarma Pickle

  1. Take veggies in a sauce pan, cover with water and cook for 2 to 4 mins till the veggies is lightly cooked. The veggies should just bent and yet crunchy. Drain it. if you are using cucumber don't boil it.
  2. Take all the brine in a sauce pan and bring it to a boil.
  3. Add veggies and green chillies in a bowl.
  4. Pour this over veggies and cool it.
  5. Pour it in a bottle and store in fridge.

    Why to throw away water after cooking veggies and latter draining it. You can use same water and boil with vinegar and save minerals and flavour wasted away.
